**Ingredients:**

 

For the Paneer:

- 1/2 cup onion, finely chopped

- 1/2 cup tomato, finely chopped

- 1/4 cup cashew nuts, soaked in warm water

- 1/4 cup milk

- 1/4 cup fresh cream

- 1/4 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon garam masala

- Salt to taste

- A pinch of saffron strands, soaked in 2 tablespoons of warm milk

 

For the Shahi Gravy:

- 2 tablespoons ghee (clarified butter)

- 2-3 cloves

- 2-3 green cardamom pods

- 1-inch cinnamon stick

- 1 bay leaf

- 1/4 cup onion, finely chopped

- 1/4 cup tomato, finely chopped

- 1/4 cup fresh cream

- 1 tablespoon sugar

- 1/4 teaspoon white pepper powder

- Salt to taste

 

**Instructions:**

 

**Paneer Preparation:**

1. Heat ghee in a pan and add cumin seeds. Let them splutter.

2. Add finely chopped onions and sauté until they turn translucent.

3. Add tomatoes and cook until they become soft.

4. Drain the soaked cashew nuts and blend them with milk to form a smooth paste.

5. Add the cashew-milk paste to the pan and cook for a few minutes.

6. Add turmeric powder, red chili powder, garam masala, and salt. Mix well.

7. Gently add the paneer cubes and cook for another 2-3 minutes.

8. Pour in the saffron milk, stir, and set aside.

 

**Shahi Gravy:**

1. In another pan, heat ghee and add cloves, cardamom, cinnamon, and bay leaf. Sauté for a minute.

2. Add finely chopped onions and cook until they turn golden brown.

3. Add tomatoes and cook until they become soft and the oil separates.

4. Remove the bay leaf and blend the mixture into a smooth paste.

5. Return the paste to the pan and add fresh cream, sugar, white pepper powder, and salt. Cook for a few minutes until the gravy thickens.

 

**Bringing it Together:**

1. Combine the paneer mixture with the Shahi gravy.

2. Simmer for a few minutes until the flavors meld together.
